Art & Food Residency ‘Eating Between Tides’

A three-month international residency for collaborative projects focused on sustainable and regenerative food practices. ‘Lisbon Spice Rack’, led by Taiwanese artist and architect Rain Wu, was the project chosen for this residency.

This project seeks to develop the creation of a regenerative menu that includes ingredients from the Tagus Estuary (Mar da Palha).

‘Lisbon Spice Rack’ is based on a research that proposes to involve the community in a learning process about edible wild and marine plants that can be found in the Mar da Palha. The project involves foraging, drying and fermenting local resources.

The regenerative menu developed during the residency will be tested at the EB Luiza Neto Jorge school in Lisbon’s Marvila district, as well as in art institutions, including the ‘CAM’s Table’ restaurant. As a legacy of the residency, a ‘local flavours’ installation will be introduced at both the restaurant and the Marvila Library, designed to enhance the public’s sensory experiences. André Magalhães, ‘CAM’s Table’’s Chef, will serve as a consultant for the residency.
